Sausage, Peppers and Pasta For MP

This is really simple and really good as well. And cheap, depending on the price of peppers at the time you make it.

Chris loves the link spicy italian sausages. I have also used kielbasa, which I think I like a bit better, but both are good.

For the italian sausage links, I usually broil them. You have to turn them a lot, but lower the oven rack a little lower than you normally would use for broiling, otherwise they will smoke like hell. Prick them with a fork too before cooking, as I didn't do this once and almost burnt the house down. After they are done, take them out and put them aside to cool. After you have sauteed the veggies, add in sliced sausages. I wouldn't use the whole package, but you guys may have to if you have bigger families. My kids don't really eat this one yet, but they really like kielbasa.

For kielbasa, I slice it and then saute it with the veggies.

Slice up 2-4 peppers whichever colors you want. I used orange and green yesterday. I also sliced up 1/2 of a red onion. In a tiny bit of olive oil I saute it all until barely crisp. The kielbasa will be showing some bits of browning. At this point, I throw in cold, cooked spaghetti noodles that I always seem to have left over from other things. I add in enough to mix it into the other ingredients, but not too much as I don't want it too pasta-y, more vegetable-y.

Chris eats his with grated parmesean (don't know how to spell this one!) We hardly ever have leftovers with this.

OMG - this is going on next week's menu for sure. I know I can get keilbasa up here...I wonder about the Italian link sausages, though. Will keep you posted (no pun intended).
